As humans we would care more about other humans in such situations, because we can understood more fully the hurt a loss would be to another human. However, this is not the same as saying humans are the centre of the natural world, because a human loss is no greater loss to the Universe than the horse. Which is contrary to what you said regarding man being considered the centre of all things in a humanist view. We are not the animals with most esteem or dignity, we’re one life form who has carved a niche on Earth, just as any other. However, our nature as humans creates greater understanding between humans than other life, which makes helping humans more beneficial in the mindset of the human. It matters not one jot to nature though.
You can’t compare this to Hitler, because Hitler was quite clear that he saw Aryans as superior, which isn’t the same as saying that all life is no more special than the other. This isn’t meant to be derogatory in a comparison, which is another way your Godwin’s law invocation fails.
